Tofu made from Iowa soy ‘blows other tofu out of the water’

We are making headlines once again. Or come visit us out at our kitchen and buy yourself a little slice of protein heaven that is less than 24 hrs old and for only $3 a pound!

Iowa is one of the top soybean producing states in the nation, but very little of the state’s soybean harvest actually makes it to Iowans’ dinner plates.

Three Iowa City entrepreneurs want to change that.

“Iowa is proud to grow soybeans but is not so proud to eat them,” said Jake Gratzon. “We are using the state’s resources to create an amazing product.”

That product is tofu.

Gratzon and his business partners Matthew Mesaros and Tim Schuett are the owners of Old Capitol Food Company, which produces fresh tofu using locally-sourced, organic, non-GMO soybeans.
