BBQ Tofuwich w/ Mayu Slaw

by Matthew Mesaros

Grilling outdoors with your friends? Stuck inside on a cold winter evening? Either way you can quickly whip up a hefty and delicious sandwich in minutes with Old Capitol Tofu and Old Capitol Mayu. Choose your favorite hamburger or hoagie-style bun (or wrap with lettuce) and top it with a quick seared tofu steak, Mayu dressing and a mountain of Mayu Coleslaw to savor the summer (even if it’s actually winter).

Ingredients

  • 2 unit(s) Old Capitol Tofu, Firmer or Firmest
  • 2 tablespoon Tamari soy sauce
  • 3 tablespoon Cooking oil
  • 6 ounce BBQ sauce
  • Salt / Pepper to taste
  • 4 ounce Mayu dressing
  • 2 - 4 ounce Sriracha
  • 18 - 24 ounce Mayu Coleslaw
  • Preferred bun or lettuce wrap

*Sriracha here is used only if you want to combine it with Mayu for a spicy topper to your tofu steak. A drop of liquid smoke on each steak goes a long way, unless you've already used it in the preparation of your barbecue sauce as noted in Cooking Tips.

Directions

  1. Prep your Mayu Coleslaw.
  2. Slice your tofu block from the side into 3 or 4 tofu steaks depending on whether your using Old Capitol Firmer or Firmest as well as considering how hefty you want each sandwich to be.
  3. Season with soy sauce and salt & pepper to taste.
  4. Grill or pan sear each side on medium high to slightly brown using the oil to prevent sticking.
  5. Brush on bbq sauce and flip, searing the sauce into the steak for a minute. Brush the second side and flip to sear it as well. Remove from heat.
  6. Place a bbq tofu steak on the bottom bun and drizzle with Mayu or spicy Mayu.
  7. Top the steak with a heaping handful of Mayu Coleslaw. If you want a bit more of a smoky barbecue flavor then squirt a bit more of your bbq sauce on top before finishing your sammie.

Cooking Tips

You can use any barbecue sauce that you like for this dish, including making your own as I have. I recommend blending and reducing tomato sauce and tomato paste with brown sugar, apple cider vinegar, paprika, honey or molasses, Worcestershire sauce (they’re are vegan versions of this), salt, pepper, and a few drops of liquid smoke.

Tofu steaks could be marinated overnight and this should result in greater flavor penetration. The purpose of this recipe, however, is to demonstrate how one can quickly put together a sandwich on the fly. Combined with the added Mayu and heaping coleslaw, barbecue sauce brushed on while cooking gets the job done just fine.
